The Alto Casertano villages
(Caserta), are plenty of typical and traditional products. The most
important cheeses, salami and cold cooked meats, wines and oil. Among
the many cheeses we mention the
buffalo mozzarella, the “caciocavallo”, the
“ricotta”, the peruto cheese, the roman conciato, the “pezza” of Vairano,
... etc.
Typical cheeses and salumi
made in this land ought to be tasted and appreciated, although Veronelli,
guru of the Italian gastronomy, already extolled the salumi of these lands
especially the sausage preserved under the "sugna" made in Vairano Patenora.
There are many
products worthy to be mentioned: the “peschiole”, produced in Vairano
Patenora, the chestnuts of Roccamofina, the annurche apples, the hazelnut
... etc.
